If you continue to use a raster format, then I also recommend png.

On the other hand, if you want to consider being able to convert
sketches to text later on, it would be quite nice to have the original
stroke information for recognition rather than just the bitmapped
representation. So you might give some thought to saving a vector
version of the sketch.
